Brad Carter is the unofficial spokesman of Birmingham and Carters is his love letter to the city. Bread from the mill down the road, a soup that draws inspiration from historic cookbooks from the region, as well as petit-fours which take inspiration from the tiles in an underpass (of all places). All using ingredients only found within the UK. A totally unique experience and a glimpse into the mind of a future (and arguably present) culinary superstar.
The pick of the menu is that Birmingham Soup. A funky beefy number with ox heart and a tuile made to look like the frontage of the Central Library. Only Brad could get away with that, the naughty bear.
