Eating outdoors in that famously balmy South Wales microclimate? It makes sense because Kindle is all about live fire cooking served up in their ‘sustainable heated winter cabin restaurant’. And they’re in short supply, aren’t they? It’s an inclusive menu, mostly vegetarian and gluten free. Chef Tom Powell, previously at Abergavenny’s The Walnut Tree, makes magic with open fire and smoker. Menus change often but you might find flatbreads with burnt onion butter, a reimagined baked potato with aioli or hanger steak and pepper sauce. They’ll lend you a blanket, too.
