If you were to show Italian grannies – the type that you can see rolling pasta in the windows of restaurants in the streets of Italy – what goes on in most British kitchens, they would be horrified. Cream in carbonara, courgetti, Dolmio to name but a few of the atrocities.
Yet, when they happened upon Little Hollows they would breathe a sigh of relief. Here, they would think, the ancient art of pasta is in safe hands. What started as a wildly popular market stall is now your friendly neighbourhood Italian restaurant, serving up some of Bristol’s best stuffed pasta from its unassuming home on Chandos Road. Booking is essential; Barney isn’t the only one shouting about this place – Little Hollows was added to the Michelin Guide in 2022. And rightfully so.
