To think that four years ago bao buns were exotic. Now everyone is doing them, right down to the supermarkets, filled with just about anything. There is still only one place to get them fresh in Birmingham and that is Tiger Bites Pig. Steamed, pillowy, buns filled with things that stay true enough to the Far East. The braised beef cheek with cured egg yolk is stuff of legend, but the real deal is the pork belly. Fatty and loaded with umami, it might just be the city centre’s best lunch option.
